Green Tomato Chutney

Besides cutting up of the tomatoes and onions this recipe is a whiz to get through. Super easy and very delicious

Ingredients
  

  • 2 1/2 pounds firm green tomatoes corsely chopped
  • 1 1/4 cups brown sugar packed
  • 1 cup red onion chopped
  • 1 cup golden raisins
  • 1 cup cider vinegar
  • 3 tbsp fresh ginger grated
  • 3 cloves garlic pressed
  • 1 tbsp mustard seeds
  • 1 teaspoon chili pepper flakes
  • 1 teaspoon fennel seeds
  • 1 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1/8 teaspoon ground cloves
  • 1 cinnamon stick
  • 1/4 teaspoon ground nutmeg

Instructions
 

  • Place all of the ingredients in a medium-sized (about 6-8 qt) thick-bottomed pot. Bring to a boil and reduce to a simmer. Cover and cook for 45 minutes stirring frequently. Taste and adjust seasonings.

Notes

I have amended the recipe by adding 3 cloves of pressed garlic.
