A great summer soup! I learned this while in Spain from a friend. Her method was to use a blender. I use a food processor because when I make it I make a lot. It only takes 10 minutes and its great. This recipe will make 2 liters or 2 quarts

Sweet & Sour Pickled Cucumber

This is typically Nordic and there are several variations of this. This one is super easy and very fast. It can be served with almost any poached fatty fish, smoked fish, cold meats and fish, some recipes for roast lamb or meat pates.

It’s purpose is to lighten other foods that are rich and fatty much like cornichons do with pate’s.

Asian Flavored Red and Green Salsa

Make this salsa and use it for my Asian Flavored Burgers or any grilled or barbecued meats and chicken. You can also add a hand full of bean sprouts (mong beans) and some noodles and it makes a great little noddle salad.

Serving this with my Asian Flavored Pork Burgers is a good combo.

A Quick Note

I wanted to take a minute to say that I do try and weigh as many of the ingredients as I can. I think it helps make recipe results more consistent. Of course professional bakers even measure liquids by weight. I don't mind pulling out my little digital scale when I need to.
