I can’t imagine anything as simple or versatile as these little beauties. Besides whipping a little heavy cream and mixing in a bit of horseradish they practically make themselves.

Feel free to change the type of fish, smoked haddock, trout just about any fatty smoked fish will do.

Easy as anything can be but very elegant and stylish. Who gets tired of smoked salmon or most smoked fish.

Ingredients
  

  • 24 frozen Bellini's
  • 1 200 gr smoked salmon
  • 2 dl heavy cream
  • 3-4 tbsp Horseradish - preferably fresh prepared will work well
  • 3-4 radishes for decoration
  • Few sprigs fresh dill
  • salt and pepper to taste

Instructions
 

  • Defrost the Bellini's, whip the cream add half the horseradish and fold in. Taste and add more until you like it, also add a bit of salt and black pepper.

Notes

If you can't find Bellini's in the supermarket you can easily substitute toasted white bread cut into small rounds.

A Quick Note

I wanted to take a minute to say that I do try and weigh as many of the ingredients as I can. I think it helps make recipe results more consistent. Of course professional bakers even measure liquids by weight. I don't mind pulling out my little digital scale when I need to.
