Cannolicchi pasta, also known as “little cannoli” in Italian, is a type of pasta with a distinctive spiral-shaped form. It is traditionally made with semolina flour and water, and it is often bronze cut, which gives it a rough texture that helps it cling to sauces. The name aptly reflects the pasta’s resemblance to miniature pastry tubes. Cannolicchi pasta is typically about 1/2-inch in diameter.

A traditional sauce that is often used for cannolicchi pasta called cannolicchi con le sarde. This Sicilian dish features cannolicchi pasta tossed in a sauce made with sardines, tomatoes, pine nuts, raisins, and saffron. The sardines provide a rich, savory flavor, while the tomatoes add acidity, the pine nuts offer a nutty crunch, the raisins provide a touch of sweetness, and the saffron lends a unique and aromatic flavor.
