Sweet & Sour Pickled Cucumber
This is typically Nordic and there are several variations of this. This one is super easy and very fast. It can be served with almost any poached fatty fish, smoked fish, cold meats and fish, some recipes for roast lamb or meat pates.
It’s purpose is to lighten other foods that are rich and fatty much like cornichons do with pate’s. Here it’s a traditional accompaniment to poached salmon and other poached fish.
Sweet & Sour Pickled Cucumber
This can be served with almost any poached fatty fish, smoked fish,cold meats and fish, some recipes for roast lamb or meat pates.
Ingredients
- 200 gr cucumber peeled and sliced very thinly, about 1-1 mm.
- 1 dl white wine vinegar or applecider vinegar
- 1½ tbsp plain white sugar
- ½ tsp salt
- 1 tbsp fresh dill finely chopped
Instructions
- Dissolve the sugar and salt in the vinegar, add the dill and pour over the cucumbers and mix well.
- Marinate in the fridge for 1 to 2 hours.
