This is typically Nordic and there are several variations of this. This one is super easy and very fast. It can be served with almost any poached fatty fish, smoked fish, cold meats and fish, some recipes for roast lamb or meat pates.

It’s purpose is to lighten other foods that are rich and fatty much like cornichons do with pate’s.

Quick Pickles

Quick Pickles

These are really good and crispy. I really like these pickles because they are mild, keep their crunch and go great with burgers at a barbeque. I make them as much as I can when we can find the right cucumbers at the market. They remind me of the pickles you get in New York diners when you order a Cheese Burger Deluxe.

4 Herb Roasted Chicken

4 Herb Roasted Chicken

This is a real old classic using fresh herbs I had on the balcony. It takes about 15 minutes to prepare the chicken and 1 hour to cook it. You will love this recipe.

Pulled Pork

Pulled Pork

Absolutely delicious. We all love this recipe and I make it often. Its not exactly diet food but it’s worth it. For the bun I use what we call here in Sweden “frallor”. Its a soft white roll which works perfect with this, back home I would use a Kaiser roll.

Barbeque Sauce 1 (Thai Oyster Sauce)

Barbeque Sauce 1 (Thai Oyster Sauce) – This is a good all purpose barbeque sauce. I use it for grilled or barbequed shrimp, shallow fried soft-shell crabs and the like. It can be used in a pork or beef stir-fry and keeps for a couple of weeks in the fridge.

A Quick Note

I wanted to take a minute to say that I do try and weigh as many of the ingredients as I can. I think it helps make recipe results more consistent. Of course professional bakers even measure liquids by weight. I don't mind pulling out my little digital scale when I need to.

Canapes

I don't have a many canapes here. The ones I share are super quick, very tasty and most of all tasty. Your guests will appreciate the effort.
